I am a fan of cookies and so are most of my clients. Snacking is not a sin, but we want to ensure that you are having treats that keep your gut happy and doesn't add to inflammation in your body.
I always encourage clients to eat more healthy fats, to help their brains, joints, skin and overall inflammation. So many people stay away from fats of fear of getting fat - but that is absolutely not how it works. We need healthy fats in our diets, thinks like fatty fish (think salmon, mackerel, anchovies, sardines, avocados and things like hemp seeds. That is what our cookie is inspired by today.
These cookies will give you some of those good fats and are full of fibre. They have dates in them for sweetness, so it will also curb your sweet cravings! The almond butter gives it some extra protein and if you feel so inclined you can even add some protein powder to the mix to make it a post workout indulgence.
Whip up a batch and enjoy a delicious and nutritious treat!
1/2 cup medjool dates (pitted)
1/2 cup almond butter
1 tsp vanilla extract
1/2 tsp baking powder
2 tbsp almond milk
1 cup almond flour (can also substitute coconut flour)
1/4 cup freshly ground flax seeds
1/2 cup hemp heart
Preheat the oven to 325
Add dates, almond butter, almond milk, almond flour, vanilla, flax and baking powder into a food processor
Blend until it forms a dough, you may need to scrape down the sides a few times. If it is not coming together try adding a tbsp of almond milk. If you feel like the mixture is too wet, add a little more flour into it
Add in the hemp hearts and pulse until everything is well combined
Roll the dough into balls and place on parchment paper lined sheet pan
Press down the balls with the palms of your hand (they won't expand so they can be close together but should not be touching)
Bake for 10 to 15 minutes until brown on the edges
