Apricot Coconut Balls

I think we can all agree we love a delicious healthy snack! It has been sunny the last few days so I was inspired to make a summer flavoured snack ball.


I love apricots and snack on dried ones all the time - just make sure you are getting sulphur free ones. No need for nasty additives!


Recently I asked you guys what you want to see more of on my Instagram and the majority of you voted for snacks - so here you go.


The coconut really gives it some summer vibes, it is easy to make, has tons of fibre and will also curb some sugar cravings. I like to add protein powder into them as well, so I can eat them as a post workout snack.


As with all recipes get creative - I have made this one rolled in pistachios too, which is so delicious!


INGREDIENTS

  • 1/4 cup flaxseeds

  • 1/4 cup hulled hemp seeds

  • 1/2 cup raw almonds (you can also use almond meal instead)

  • 1/2 cup desiccated coconut ( plus a little extra to roll them in, but you can get creative here and roll them in pistachios, hemp seeds, sesame seeds)

  • 1 cup dried apricots (look for sulphur free ones)

  • 1 medjool date (pitted)

  • Protein Powder (optional and chose a lactose free one if possible, like this one)

  • pinch of salt


INSTRUCTIONS

  • Cover the apricots with boiling water in a heat proof bowl and let sit for 5 minutes

  • Rinse the apricots and quarter them

  • Add the rest of the ingredients (except for the date) into a blender and blend it on high until it all has flour like consistency

  • Add the apricots and date to the blender and pulse the mixture until it starts sticking together. If needed scrape down the sides until it is all incorporated

  • I like to wet my palms when I am working with sticky mixtures

  • Roll into bite sized balls

  • Roll each ball in either coconut, nuts or seeds of your choice

  • Store in the fridge

  • Enjoy!
