Banana Bread Protein Cookies




I feel like during quarantine every one was either making sourdough or banana bread. Either way, we love carbs :)


Personally, I buy bananas to have on hand before my workouts but then I keep forgetting them every single time!! So I make a lot of baked goods with mashed bananas. I obviously love banana bread but there is only so much I can eat. So I mix it up, sometimes I will make pancakes and sometimes I make cookies. I like the cookies, because I add in a scoop of protein powder and they turn into a delicious post workout snack.


They are also great if you have a long day of meetings and don't want to crunch on your next zoom call.


INGREDIENTS:

  • 1 1/2 cup of almond flour

  • 1 scoop of hemp protein powder

  • 1/4 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp cardamom

  • 1 tbsp maple syrup

  • 1 large egg

  • 4 ripe bananas, mashed with a fork

  • pinch of salt


INSTRUCTIONS:

  • Preheat the oven to 350 F

  • Mix all of the dry ingredients together in a bowl

  • Add the mashed bananas and mix well

  • Add in the maple syrup and egg and mix until everything is fully incorporated

  • Using a spoon, scoop out roughly 1 1/2 tbsp per cookie onto a parchment paper lined cookie sheet

  • Flatten using a fork if you want texture

  • Bake for 25 to 30 minutes until the middle is set

  • Let cool and enjoy!
