4 tbsp orange juice
Zest of one orange (approximately 1 tbsp)
1 tbsp freshly ground flax seeds
1 1/4 cup almond butter (smooth)
2 tbsp of maple syrup
pinch of sea salt
2 tsp of ground cardamom
1/2 tsp baking soda
1 tsp apple cider vinegar
1/2 cup dark chocolate melted (this is for dipping or drizzling on top)
Preheat your oven to 350 F
Combine the ground flax seeds with the orange juice and zest. Stir and set aside.
Add the almond butter, maple syrup, cardamom, salt, baking soda and apple cider vinegar. Mix well, the dough will be sticky
Place dough in freezer for 10 minutes
Wet your hands and roll the dough into balls and place on the cookie sheet.
Using a fork, press down the cookies to flatten them.
Bake for 12 to 15 minutes
Remove cookies and let cool completely (they will firm up as they cool, so give them time!)
Once they are fully cooled and firm, dip them into the melted chocolate or using a spoon drizzle on top of the cookies.
Let the chocolate set before serving. Enjoy!
