What is better than cooking your entire meal on one pan? This delicious and nutritous meal is something you can easily throw together and ensure you are getting your protein, carbohydrates and fats all in one meal.
Get creative with marinades, spices, herbs and change the seasonings as you please! Also a great recipe to make if you need to meal prep, adjust the quantity as needed.
2 skinless chicken breasts
1/2 lb of Brussel sprouts
4 tbsp Olive Oil
2 garlic cloves, minced (or more if you like!)
1 sprig of Rosemary, leaves minced finely
2 tsp of salt
Preheat the oven to 400 F
Cut the bottom off the Brussel sprouts and quarter or half
In a small bowl mix 2 tbsp of olive oil with the garlic, rosemary and half of the salt
Brush the mixture over the chicken breasts
In a bowl combine the remaining olive oil and salt with the Brussel sprouts, mixing to coat them all
Place everything on a baking sheet
Bake for 10 minutes, flip everything and bake for another 15 minutes
The juices should be running clear and the Brussel sprouts slightly browned and easily pierced with a fork
