Chickpea Brownies

Those of you who have worked with me know that I am not a fan of grains. I try to stay away from them altogether, which has made baking a fun challenge.


This is a simple, quick, and tasty recipe to satisfy your sweet tooth cravings while providing you with lots of good fibre.

Ingredients:

  • 1x 15 oz (425g) can of chickpeas, drained and rinsed well

  • 1/2 cup + 1/4 cup of chocolate chips, divided

  • 1/2 cup of natural almond or peanut butter

  • 1/4 cup maple syrup

  • 1 tbsp coconut oil

  • 1 tsp vanilla extract

  • 1/4 cup almond flour

  • 1/4 cup cocoa powder

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • Pinch of salt

Instructions:

  • Preheat oven to 350F

  • In a food processor, blend the chickpeas, nut butter, maple syrup, coconut oil and vanilla

  • Scrape down the sides

  • Add almond flour, cocoa powder, baking soda, baking powder and salt.

  • Keep processing until everything is smooth; you may have to stop to scrape down the sides

  • Once smooth, fold in the 1/2 cup of chocolate chips (do not process the chips!)

  • Grease an 8x8 pan and pour in the batter

  • Sprinkle with remainder of chocolate chips (1/4 cup)

  • Bake for 25 minutes
