Chickpea Brownies

Those of you who have worked with me know that I am not a fan of grains. I try to stay away from them altogether, which has made baking a fun challenge.
This is a simple, quick, and tasty recipe to satisfy your sweet tooth cravings while providing you with lots of good fibre.

This is a simple, quick, and tasty recipe to satisfy your sweet tooth cravings while providing you with lots of good fibre.

Ingredients:
1x 15 oz (425g) can of chickpeas, drained and rinsed well
1/2 cup + 1/4 cup of chocolate chips, divided
1/2 cup of natural almond or peanut butter
1/4 cup maple syrup
1 tbsp coconut oil
1 tsp vanilla extract
1/4 cup almond flour
1/4 cup cocoa powder
1/4 tsp baking soda
1/4 tsp baking powder
Pinch of salt
Instructions:
Preheat oven to 350F
In a food processor, blend the chickpeas, nut butter, maple syrup, coconut oil and vanilla
Scrape down the sides
Add almond flour, cocoa powder, baking soda, baking powder and salt.
Keep processing until everything is smooth; you may have to stop to scrape down the sides
Once smooth, fold in the 1/2 cup of chocolate chips (do not process the chips!)
Grease an 8x8 pan and pour in the batter
Sprinkle with remainder of chocolate chips (1/4 cup)
Bake for 25 minutes
