Citrus Salad


I love citrus fruits! They have so many health benefits and are simply so delicious. One of the things I really enjoy eating in the summer time is a fruit salad made up mostly of citrus fruit. This recipe is beautiful to look at, refreshing, healthy and absolutely delicious!


Always a fan favourite, so try making this for your next brunch or summer get together.


INGREDIENTS:

  • 1 grapefruit

  • 1 blood oranges

  • 1 mandarin and/or tangerines

  • 3 tbsp fresh lemon juice (or lime if you prefer!)

  • 2 tbsp honey

  • 1/4 teaspoon ground cardamon

  • 2 tbsp mint

  • Optional: top with pomegranate seeds


INSTRUCTIONS:

  • Peel all of the grapefruit, blood orange and tangerine and cut out the individual segments using a sharp paring knife

  • Chiffonade the mint

  • In a small pot combine the lemon juice, honey, cardamom and any excess juice from the cut up fruit and bring to a simmer for 10 to 15 minutes

  • Let cool to room temperature

  • Add the mint to the sauce and pour over the fruit

  • Mix everything and let sit for 10 minutes before serving

  • Enjoy!
