Coconut Yogurt

For most of us dairy will have us leaving bloated, gassy and not feeling our absolute best.


I am a huge fan of yogurt and this was something I definitely didn't want to give up. So here is the perfect alternative to your dairy needs - Coconut Yogurt. This is full of probiotics (literally) and will not only satisfy you, but will also nourish your gut with friendly bacteria.


It is such a simple recipe, that you can mix up in less than a few minutes. Make sure to not use a metal spoon with this recipe as some people say it can cause a reaction. I haven’t actually tested it, but to avoid wasting ingredients, I just stick to my wooden spoon.


Just a note on dairy - for most people it will not only cause digestive problems but also increase the level of inflammation in your body. All of this can lead to allergies, skin issues, chronic sinus problems, etc. So try and reduce your dairy intake and give this vegan, healthy, gut-friendly alternative a go!


This is a great snack with some berries and granola or you can add it to your baking no problem.

Ingredients:

  • 1 can full-fat coconut milk

  • 2 probiotic capsules

Instructions:

  • Shake the can well before opening

  • Pour can content into a clean mason jar

  • Twist open the capsules and pour them into the mason jar

  • Stir with a wooden spoon (no metal!)

  • Cover with a clean kitchen towel and secure with a rubber band

  • Let sit on your kitchen counter for two days, stirring if liquid separates

  • After 2 days, place yogurt in the fridge and use within 5 days

  • Enjoy!
