Gut Healing Vegetable Broth


Ingredients:

  • One medium yellow onion, roughly chopped

  • 5 cloves of garlic, grated or cut in half

  • 1 inch knob of ginger, roughly chopped

  • 1 tbsp ground tumeric

  • 1 cup of greens, like kale, spinach or collard greens

  • 1 stalk of leeks, washed and roughly chopped

  • 1 cup fresh mushrooms, I like shiitake, roughly chopped

  • 2 large carrots, roughly chopped

  • 2 celery stalks, roughly chopped

  • 1/4 cup dried wakame or kelp seaweed

  • 1 bunch of your choice of herbs, cilantro, parsley or thyme

  • 1 tbsp of coconut or olive oil

  • Enough water to cover everything


Instructions

  • Add all ingredients into a crock pot and set to low for 4 to 6 hours

  • Strain the liquid

  • Enjoy!

  • Let cool completely before storing
