This is a meal prep staple if I am tired, busy or having a lazy day. I love having shredded chicken in the fridge. It is so versatile and awesome to create so many different meals with. Feeling like a salad tonight? Cool, let’s add some shredded chicken for extra protein! Some clean protein to go with your veggies? Shredded chicken! Want to make a wrap?...you get it.
Chicken breasts are something we can easily obtain, my favourite is obviously from TRULOCAL (Use my code TRUSHEYWELLNESS) and it is simple to make. This is a dump it and forget it meal. For this recipe, I use a Crock-Pot but I also use my Thermomix often to make it.
The beauty of this recipe is that you can change it up every time you make it. Feel like pulled chicken sandwiches, dump a bottle of your favourite bbq sauce into the crockpot. Want something more Asian-inspired? Add some coconut aminos and sesame oil for example. The possibilities are endless!
I am excited to see your meal prep and what dishes you make with this base :)
4 chicken breasts
1 cup of chicken or vegetable broth (or you could use 2 to 2 1/2 cups of bbq sauce if that's the flavour you wanted)
2 tbsp of garlic powder
2 tbsp of onion powder
1 tbsp of chilli powder (optional)
Place the chicken breasts in the crockpot
Add the rest of the ingredients
Set for 6 hours on low or 3 hours on high
Shred the breasts with two forks
