Sugar & Grain Free Granola

INGREDIENTS:
1 1/2 cup slivered or roughly chopped almonds
1 1/2 cup rough chopped pecans
1 cup roughly chopped walnuts
1 cup unsweetened shredded coconut
1/4 cup flax seeds
3 tbsp ground flax seeds
3 tbsp cinnamon
2 tbsp ginger
1 tbsp cardamon
pinch of salt
3 tbsp of olive oil or melted coconut oil
2 tsp vanilla extract
INSTRUCTIONS:
Preheat oven to 325 F
Mix all ingredients except for the oil and vanilla in a bowl, stir well
Add in the oil and vanilla, stir to combine
Spread out on a baking sheet lined with parchment paper
Bake for 15 to 25 minutes (Granola can burn fast, so check on it continuously, once it turns golden brown take it out)
Store in an air tight container for up to 2.5 weeks
