Sugar & Grain Free Granola

The pandemic has truly changed our whole lives; the way we live and also the way we eat! I know many of my clients have gained weight because of the pandemic; being stuck at home, eating too many snacks and Ubereats!


While I'm not against indulging in good food, I do believe there are so many ways to make delicious food that is also healthy for you!


For instance, if you are looking for a healthy and yummy breakfast granola - why not make your own! This grain-free and sugar-free granola only takes 30-minutes to make, and you only need 12 ingredients! (You can store it for up to 2.5 weeks!)


This recipe packs a serious punch in the way of healthy fats, omega 3s and protein from plenty of nuts and seeds.


You can either eat it as is or with your favorite dairy-free milk of yogurt. You can even just mix it with some fruit and eat it as a healthy snack in the afternoon. Whichever way you like it, this granola is a staple to have ready in your pantry!

INGREDIENTS:

  • 1 1/2 cup slivered or roughly chopped almonds

  • 1 1/2 cup rough chopped pecans

  • 1 cup roughly chopped walnuts

  • 1 cup unsweetened shredded coconut

  • 1/4 cup flax seeds

  • 3 tbsp ground flax seeds

  • 3 tbsp cinnamon

  • 2 tbsp ginger

  • 1 tbsp cardamon

  • pinch of salt

  • 3 tbsp of olive oil or melted coconut oil

  • 2 tsp vanilla extract


INSTRUCTIONS:

  • Preheat oven to 325 F

  • Mix all ingredients except for the oil and vanilla in a bowl, stir well

  • Add in the oil and vanilla, stir to combine

  • Spread out on a baking sheet lined with parchment paper

  • Bake for 15 to 25 minutes (Granola can burn fast, so check on it continuously, once it turns golden brown take it out)

  • Store in an air tight container for up to 2.5 weeks

  • Enjoy!
