Cassava Flour Tortillas

Craving some Mexican food tonight but don't feel like a belly full of bloat? Try making these grain-free tortillas, to keep you and your digestion happy.

Ingredients:
3/4 cup Cassava flour
2 tbsp olive oil
1/2 cup warm water
Pinch of salt
Instructions:
In a bowl, whisk together the flour and salt
Add the olive oil and water
Knead until the mixture is smooth and forms a dough
Divide and roll into golfball-sized balls
Place each ball between two pieces of parchment paper and roll out with a rolling pin (should you have a tortilla press, use that!)
Heat a dry pan over medium heat (do NOT add oil)
Once the pan is hot, place the tortilla into it
Wait until bubbles form and then flip
Wait until bubbles form on this side, too
Watch for the sides to be browned
