Vegan Kale Pesto

I have a new fresh vegan recipe for your guys! Have you heard of Kale Pesto? Well here it is!


Kale is so good for you! It brings you all nutrients that your body needs such as Vitamin A, K, C and B6 (that's a lot of vitamins!) but also Magnesium, Potassium and Calcium!


This ingredient is a must have in your kitchen! That's why I created this Kale Pesto, I believe it is an original way of incorporating superfood in your nutrition. And guess what, Kale is an antioxidant, that means that it cleans your body from unwanted toxins. Isn't that amazing?


Here are some ideas on how to add this Kale Pesto in your nutrition: Pesto Pasta, Pesto Pizza and Pesto Tartines! Sounds so good! Enjoy this recipe!



Ingredients:

  • 1 1/2 cups torn lacinato kale (no stems)

  • 1/2 cup parsley (no stems)

  • 1/2 cup olive oil (more if needed)

  • pinch of sea salt

  • 2 cloves of garlic (more should you so desire!)

  • juice of one lemon

  • 1/4 cup to 1/2 cup raw almonds

Instructions:

  1. Add all the ingredients (except for the almonds) to a food processor and pulse until everything is smooth

  2. Add the almonds and pulse until the nuts are ground and you achieve the desired consistency - start with 1/4 cup and work up to 1/2 cup if needed

  3. Serve on pasta, pizza, as a dip or as a base for a sandwich. Enjoy!
